Crispy Fry Chicken
- 3 lb Chicken
- 1/4 tbsp Salt
- 1 tsp Black pepper
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 2 tsp All purpose seasoning
- 1 tsp Paprika
- 3 cup Vegetable oil for frying
- 1 cup Flour
- 1 tsp Salt
- 1 tsp All purpose seasoning
- 2 tsp Baking powder
- 1 tsp Paprika
- 2 Eggs
- 1/4 cup Water
- 2 tsp Chilli powder
- Cut excess skin from chicken, rinse and place in a deep bowl
- Add all the spices, toss and marinade for an hr in the fridge
- Mix eggs and water in a deep dish
- In a brown paper bag or zip lock, add flour and remaining ingredients
- Remove the chicken from the fridge and pure egg batter over it
- Let the egg wash soak into the chicken for about 10 minutes
- Add half of the chicken each time to the flour and give it a heavy toss, remove chicken pieces and placed on a wire rack for another ten minutes
- Heat oil in a heavy bottom pot until smoking, turn heat to medium
- Add chicken to oil and fry until crisy and golden brown
