Surprise Chicken Enchiladas
- 6 chicken breasts
- 1 can Ro-Tel tomatoes, drained
- 1 can mushroom soup
- 1 can cream of chicken soup
- 1/2 small can chopped green chilies
- 1 small onion
- 1 lb. Cheddar cheese, grated
- 12 tortillas
- salt and pepper to taste
- 1/4 tsp. garlic salt
- 1/4 tsp. cumin (optional)
- 1/4 tsp. chili powder
- Cook chicken in salted water and cut into small pieces.
- Mix soups, Ro-Tel tomatoes, green chilies and seasonings.
- Steam tortillas until soft.
- Fill a soft tortilla with 1 tablespoon chicken, 1 tablespoon onion and 1 tablespoon cheese.
- Roll.
- Fill flat casserole dish.
- Pour Ro-Tel mixture over this.
- Sprinkle more onions and cover with cheese.
- Bake at 350u0b0 for 20 to 30 minutes.
