Arroz De Huaca Recipe
- 1/2 c. Chopped Onion
- 4 x Dry malagueta chiles, stems and seeds removed crushed, or possibly substitute Piquin chiles
- 2 tsp Extra virgin olive oil
- 1 c. White rice
- 1/2 c. Boiling water
- 1 1/2 c. Coconut lowfat milk
- Saute/fry the onion and chiles in the oil till the onions are soft.
- Add in the rice and continue to saute/fry till the rice turns opaque.
- Combine the water and coconut lowfat milk and bring to a boil.
- Add in the rice mix and bring back to a boil.
- Lower the heat, cover and simmer for 30 min or possibly till the rice is tender.
- Remove the chiles and fluff the rice with a fork before serving.
