AMIEs Chocolate Pistachio cheesecake

  1. Combine all crust ingredients in a large mixing bowl.
  2. Mix well until well combined.
  3. Press the mixture into the base and up the sides of the tin to make a pie shell.
  4. Refrigerate for at least 40 minutes.
  5. Mix the sugar and the soft cream cheese in a large bowl.
  6. Stir until creamy and smooth for about 5 minutes.
  7. Pour in melted chocolate and vanilla.
  8. Mix well.
  9. (We can use electric mixer in mixing the ingredients).
  10. Pour the filling mixture over the cold crust.
  11. Refrigerate at least 2 hours before proceeding.
  12. Combine powdered sugar and pistachios in a food processor.
  13. Slowly pour in and mix heavy cream.
  14. The mixture will thicken after a few minutes.
  15. Spread the cream over the cheesecake.
  16. Serve, share and ENJOY!
