Blueberry Dream Fritters
- vegetable oil
- 12 cup whipping cream
- 1 egg
- 1 teaspoon vanilla
- 1 cup self rising flour
- 13 cup self-rising cornmeal
- 13 cup granulated sugar (I would think you could sub Splenda)
- 1 12 cups fresh blueberries
- powdered sugar
- Heat 2 inches of oil in a large heavy skillet to 375*F. on a deep fat thermometer.
- Meanwhile, combine cream, egg and vanilla in a small bowl.
- Combine the flour, cornmeal and white sugar in a large bowl.
- Stir in cream mixture just until moistened.
- Fold in blueberries.
- Carefully drop the batter by heaping tablespoonfuls into hot oil.
- Fry until golden brown, turning once.
- Drain well on paper towels.
- Sprinkle with powdered sugar.
- Serve immediately.
- Enjoy!
