Island Rice

  1. Bring 2 1/2 cups water to a boil in a medium saucepan; add rice and next 4 ingredients (rice through salt).
  2. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed.
  3. Remove from heat; stir in cilantro, onions, and juice.
