Creamy Radish Salad
- 2 cups white or daikon radish (10 cm in length) or 3 bunches red radishes
- 3 Tbsp vinegar
- 4 Tbsp sour cream or creme fraiche, or more to taste
- 1/2 tsp sugar plus more to taste
- to taste Salt & pepper
- 1 Tbsp fresh dill (optional)
- Slice the radishes thin or into matchsticks.
- Put in a large bowl and mix with vinegar, sour cream/creme fraiche, sugar and a little salt & pepper.
- Adjust the dressing to taste - if you want more acidity, add a little more vinegar, or if it's a little too tart, add another 1/2 tsp sugar.
- Lastly, mix in the dill.
- Serve as-is or over some salad greens!
