Better for You Squash Casserole
- 8 -10 yellow squash
- 1 large onion, Sliced
- 2 large eggs
- 12 cup shredded cheddar cheese
- 1 teaspoon salt
- lots fresh ground pepper
- Pam cooking spray
- Slice Squash and onions.
- Put them in a large pan with enough water to cover the bottom, plus a few extra seconds.
- Bring to boil, then let the water from the vegetables cook out.
- Takes about 20 minutes.
- Add salt and pepper.
- When veggies are nice and soft drain out the excess fluids.
- Then smush the veggies.
- Don't make them mush, but smush nicely.
- Mix together, in a separate bowl, the egg and cheese.
- Then add the hot veggies, allowing the cheese to melt and hold it all together.
- Spray a casserole dish with PAM.
- Add the mixture to dish, sprinkle with more ground pepper, and place in preheated 350 oven for about 30 minutes.
- Or until top is nicely browned and slightly bubbly.
