Spicy Orange Rice Noodles
- 2 cups 100% orange juice (not from concentrate, preferably no pulp)
- 1 teaspoon chili garlic sauce, or more to taste (chili paste is okay too)
- 4 ounces uncooked angel hair rice noodles (look for them in the international section of your local grocery store)
- 1 teaspoon extra virgin olive oil
- Sea salt to taste
- Bring the orange juice to a boil in a medium nonstick saucepan over high heat.
- Add the chili garlic sauce and rice noodles.
- Boil the noodles, stirring occasionally (using a nylon pasta fork, if possible), for 2 to 4 minutes or until they are just soft and almost all of the orange juice is absorbed.
- Remove the pan from the heat and stir in the olive oil.
- Allow the noodles to stand for about 2 minutes to cool slightly and to absorb the remaining juice.
- Season with salt.
- Serve immediately.
