Citrus-Gelatin Fruit Salad
- 3 gal. Very hot water (160F to 180F)
- 3 pkg. JELL-O Brand Assorted Citrus Sugar Free Gelatin, Orange Flavor
- 2-1/4 qt. Canned mandarin oranges, well drained, divided
- 1-1/4 gal. Canned pineapple chunks, well drained
- 3 qt. Prepared whipped topping, divided
- Add hot water to gelatin in large bowl; stir until gelatin is completely dissolved.
- Refrigerate 30 minutes or until gelatin is thickened but not set.
- Reserve 48 of the orange segments (or 4 orange segments for trial recipe) for the garnish.
- Add remaining orange segments and pineapple to gelatin; stir gently until well blended.
- Portion 1/3 cup (3 oz.)
- of the gelatin mixture into each of 48 dessert or plastic portion cups (or 4 dessert cups for trial recipe).
- Top each with 2 Tbsp.
- of the whipped topping; cover evenly with remaining gelatin.
- Refrigerate until completely set.
- Top each with 2 Tbsp.
- of the remaining whipped topping and 1 orange segment.
