Key Lime Coconut Poke Cupcakes

  1. Prepare cake batter and bake as directed for cupcakes.
  2. Cool in pans 10 min.
  3. Pierce tops with skewer.
  4. Add boiling water to gelatin mix; stir 2 min.
  5. until completely dissolved.
  6. Spoon over cupcakes.
  7. Refrigerate 30 min.
  8. Remove from pans.
  9. Spread cupcakes with frosting.
  10. Sprinkle with coconut; top with lime wedges.
