Mediterranean Chicken & Pasta Toss
- 2 tablespoons olive oil
- 1 zucchini, medium, sliced
- 1 yellow squash, medium, sliced
- 1 14 lbs boneless skinless chicken breasts, cut into bite sized pieces
- 3 cups cherry tomatoes
- 12 cup Wish Bone Italian salad dressing
- 3 cups spinach penne or 3 cups whole wheat penne, cooked, drained
- 12 cup fresh basil, chopped
- 14 cup reduced-fat feta cheese, crumbled
- Heat oil in large nonstick skillet on medium high heat.
- Add zucchini, squash, and chicken; cook 8-10 minutes or until vegetables are crisp tender and chicken is cooked through (170 degrees).
- Stir frequently.
- Stir in tomatoes and dressing, cook 2 minutes or until heated through, stirring occasionally.
- Add pasta and basil, toss to coat.
- Cook until heated through, stirring frequently.
- Sprinkle with cheese.
