Domed Potatoes

  1. Preheat oven to 350*.
  2. Cut the potatoes in half lengthwise and rub the skin with olive oil.
  3. Place the potatoes, skin side down in the oven for about 45 minutes prior to serving.
  4. When they're done, the cut sides will puff up slightly and assume a brown color.
  5. Remove them from the oven, salt lightly and dust with paprika.
  6. Serves 2.
  7. Note: Serve 1/2 at a time.
