Portabello Poppers
- 4 packages Portabello mushroom
- 16 oz artificial Crab meat
- 1/2 Green pepper
- 2 bunch Green onions
- 3 Japeleno peppers (or to taste)
- 1 cup Mayo
- 2 cup Mozzarella cheese
- 1 cup Italian bread crumbs
- 1/2 tsp each, garlic powder, salt, pepper
- 1/2 cup Parmesan cheese
- 1 Olive oil
- Clean mushrooms and pull out stem.
- Set aside.
- Process onions, peppers and crab to mince.
- Combine all of ingredients except parm cheese and oil.
- Stuff caps fully and place in large baking pan.
- Sprinkle with parm.
- Drizzle with oil.
- Bake 400 for 35 mins.
