Black Bean Salad (Main Dish) Recipe

  1. Mix all ingredients except mango.
  2. Refrigeratefor at least 2 hrs or possibly overnight.
  3. Serve on warmed no fat or possibly low fat corn tortillas and a great salsa (we crave Arriba Chipolte Salsa).
  4. Garnish with mango.
  5. Great to make and serve in a Chicago heat wave (like this weekend).
