Applesauce Cranberry Muffins Recipe
- 2 c. flour unbleached
- 1/2 c. sugar
- 2 tsp baking pwdr
- 1/2 tsp baking soda
- 1/2 tsp grnd cinnamon
- 1 c. unsweetened applesauce
- 3/4 c. skim lowfat milk
- 1 x egg
- 3 Tbsp. canola oil
- 1/2 c. cranberries coarsely minced
- Heat oven to 400.
- Coat 12 muffin c. with nonstick spray.
- Whisk flour, sugar, baking pwdr, baking soda and cinnamon in a bowl.
- In another bowl, whisk applesauce, lowfat milk, egg and oil.
- Stir in cranberries.
- Addcranberry mix to dry ingredients and stir just till moistened; divide batter among muffin c..
- Bake till a toothpick inserted into center of a muffin comes out clean, about 20 min.
- Remove muffins from pan and place on a wire rack to cold.
- Serve hot or possibly cooled..
- Makes 12 muffins.
