Pastry Dough for a Single-Crust Pie

  1. Sift together the flour and salt into a mixing bowl.
  2. Work the shortening into the flour with your fingertips or a pastry blender, until the mixture is the consistency of coarse meal.
  3. Add the water, 1 tablespoon at a time, and mix with a fork after each addition.
  4. Dough should not be wet, but just moist enough to hold together.
  5. Form the dough into a ball.
  6. Wrap and refrigerate for at least 15 to 30 minutes before rolling.
