Angel Hair With Shiitake Mushrooms/Arugula/Tomato Recipe
- 2 Tbsp. Extra virgin olive oil
- 2 lrg Cloves garlic, sliced
- 1 lb Shiitake mushrooms, sliced
- 2 lrg Tomatoes, peeled, diced
- 2 bn Arugula, wash well
- 1/2 lb Angel hair pasta, cooked
- 2 Tbsp. Parmesan cheese, grated
- 1 sprg basil
- Heat oil over high heat till warm.
- Add in garlic and saute/fry till golden.
- Add in mushrooms and saute/fry for 30 seconds or possibly till tender.
- Add in tomato and arugula and combine well.
- In a serving bowl toss with pasta and top with Parmesan and basil.
