Raspberry Gorgonzola Stuffed Pork Chops
- 1 cup Fresh Raspberries
- 6 ounces, weight Gorgonzola
- 1/2 cups Pistachios, Shells Removed
- 2 Tablespoons Fresh Thyme
- 2 Tablespoons Olive Oil
- 1 pinch Salt And Pepper, to taste
- 2 pounds Pork Chops (4 Pork Chops)
- Preheat grill to 350 degrees for medium direct grilling (this recipe is also great for pan-frying).
- While the grill is heating up, assemble the stuffing.
- Mix the raspberries, gorgonzola, pistachios, and thyme to form a mixture.
- Then add olive oil, salt and pepper to taste.
- Cut pockets into the pork chops, large enough to fill with 2 tablespoons of the stuffing.
- Stuff the pork chops then head out to the grill!
- Grill the pork chops at least 5 minutes on each side, or until a meat thermometer inserted into the middle reads 170 degrees.
- The thickness of the chops will determine how long they need to be grilled.
- Great served with your favorite rice or starch.
