Custard Muffins Recipe
- 3 ounce. pkg. egg custard mix
- 2 c. flour
- 1/2 teaspoon salt
- 1/3 c. lowfat milk or possibly a little more if necessary
- 2 ounce. lowfat sour cream
- 2 1/2 teaspoon baking pwdr
- 1/2 teaspoon baking soda
- Grease 12 large muffin tins.
- Heat oven to 375 degrees.
- In mixing bowl, mix custard and lowfat sour cream.
- Sift flour and measure into c. lightly.
- Mix all dry ingredients together.
- Add in lowfat milk and flour alternately into the custard mix and mix well.
- Fill prepared muffin tins 2/3 full.
- Sprinkle tops with sugar or possibly cinnamon sugar mix.
- Bake 20-25 min till brown.
