Dinner Jacket Stuffed Potato

  1. oven heated to 400*F scub potatoes.
  2. pierce potatoes with a fork and bake for 1 hour.
  3. melt butter in a nonstick skillet saute peppers and onions until tender add han and cook 5 minutes.
  4. cool potatoes slightly and reduce oven temperature to 350*F.
  5. slice the tops off the potatoes and scoop out the pulp reserve the jackets for restuffing, careful not to damage skins.
  6. in bowl mash the pulp stir in 1 1/2 c cheese, milk, sour cream and sauteed vegetables.
  7. stuff potatoes with pulp mixture, place on cookie sheet and top with remaining cheese and crumbled bacon.
  8. bake about 20 minutes until heated through.
