Dinner Jacket Stuffed Potato
- 6 russett baking potatoes
- 1 tablespoon butter
- 12 cup diced green bell pepper
- 12 cup diced red bell pepper
- 23 cup sweet onion, chopped
- 4 ounces diced cooked ham
- 2 cups shredded colby-monterey jack cheese, divided
- 2 tablespoons milk
- 3 tablespoons sour cream
- 3 slices cooked bacon
- oven heated to 400*F scub potatoes.
- pierce potatoes with a fork and bake for 1 hour.
- melt butter in a nonstick skillet saute peppers and onions until tender add han and cook 5 minutes.
- cool potatoes slightly and reduce oven temperature to 350*F.
- slice the tops off the potatoes and scoop out the pulp reserve the jackets for restuffing, careful not to damage skins.
- in bowl mash the pulp stir in 1 1/2 c cheese, milk, sour cream and sauteed vegetables.
- stuff potatoes with pulp mixture, place on cookie sheet and top with remaining cheese and crumbled bacon.
- bake about 20 minutes until heated through.
