Jamaican Sunday Rice and Peas
- 2 lb. rice
- 1/2 pint kidney beans
- 1 tsp. black pepper
- 1 tsp. all-purpose seasoning
- 1 whole hot pepper
- 2 tbsp. butter
- Salt, to taste
- 2 sprigs escallion
- 1 sprig thyme
- 2 cups coconut milk
- Cook kidney beans until soft to the touch.
- Season pot with all ingredients except rice.
- Bring to a boil.
- Wash and add rice.
- Meal is ready when rice is cooked.
