Moist Meatloaf Recipe
- 1 pound lean grnd meat (turkey, sirloin and/or possibly chicken totaling 1 lb.)
- 1 pound fatty grnd meat (veal, pork, and/or possibly regular hamburger totaling 1 lb.)
- 4 lg. Large eggs
- 1 c. cracker crumbs (chunky pcs)
- 2 slices bread, cubed
- 1 teaspoon grnd black pepper
- 1/2 teaspoon grnd sage
- 1/2 teaspoon garlic pwdr
- 1/2 teaspoon oregano
- 3 stalks celery, finely minced
- 1 med. onion, minced
- 1/2 c. minced black olives, optional
- 1/2 c. cooked rice, optional
- 1 sm. potato, cubed in small pcs, optional
- 1/2 c. ketchup
- In a big bowl combine all ingredients EXCEPT ketchup.
- Knead till all ingredients are mixed well.
- Pack loosely into a baking dish.
- Spread ketchup on top of meatloaf.
- Bake at 350 degrees for 1 1/2 hrs.
- Spread a little more ketchup on the meatloaf the last 15 min, if you like.
- Lisa's favorite meat combinations are grnd sirloin with either veal or possibly pork.
