Rhapsody in Apple Bread

  1. Place yeast from hot roll mix in a mixer bowl.
  2. Add lukewarm water.
  3. Stir to dissolve yeast.
  4. Add sugar and lemon peel.
  5. Stir to dissolve sugar.
  6. Add eggs, one at a time, beating to blend.
  7. Add remaining ingredients and then flour from hot roll mix.
  8. Beat with a heavy duty mixer or by hand until dough is smooth and elastic.
  9. Place dough in a buttered bowl, turn dough to butter top.
  10. Cover and let rise in a warm place until doubled, about one hour.
  11. Punch down dough and shape into a loaf.
  12. Heat oven to 375F.
  13. Butter a loaf pan and place dough in pan.
  14. Cover and let rise in a warm place 30 minutes.
  15. Bake 45 minutes or until golden.
  16. Cool on a wire rack.
