BBQ chicken with corn rice, for 2

  1. Add the chicken, pepper and onion to an oven-proof pan or dish, and pour on the BBQ sauce, and mix well.
  2. Pop in the oven at 180C for 20 mins.
  3. After 20 mins, leave the chicken in the oven and bring a pan of water to the boil and add the rice.
  4. Boil according to the pack instructions.
  5. The chicken should have now been in the oven for about 40-45 minutes in total.
  6. Add the sweet corn for the last few minutes of rice cooking, then drain and wash with boiling water.
  7. Serve the chicken over the rice.
