Blondie's Mom's In A Flash Turkey Or Chicken Hash
- 2 tbsp butter
- 2 cup finely chopped roast turkey or chicken
- 1 salt to taste
- 1 cayenne pepper or hot pepper sauce to taste
- 1 1/2 cup low sodium chicken broth (from one 14 to 14.5 ounce can)
- 1 half of a 28 ounce bag of frozen diced potatoes with onions and bell peppers (Mom used and I also use Ore-Ida Potatoes O'Brien)
- 1 clove garlic, crushed
- Melt the butter in a large skillet over medium heat.
- Add the frozen potatoes, and cook, stirring, until the onions brown slightly, 2 to 3 minutes.
- Add the turkey or chicken, chicken broth, and garlic.
- Stir to combine.
- Season with salt and cayenne pepper or hot pepper sauce to taste.
- Let the hash simmer, stirring occasionally, until all of the liquid is absorbed, 10 to 15 minutes.
- Taste the hash and add more salt and/or cayenne if needed.
- Serve immediately.
- *if you ate using canned chicken broth that is not low in sodium, don't add any salt to this recipe.
