Texas Stuffed Bell Peppers

  1. Boil 3/4 large bell peppers that have had their tops sliced off and seeds taken out
  2. Brown 1lb of hamburger meat
  3. Prepare 1 box of zatarns New Orleans style white and wild rice according to directions
  4. Add 1 can of original Rotel tomatoes (drained)
  5. Remove bell peppers from boiling water, drain, and place in a baking dish to cool partially
  6. Add aprox.
  7. 2 cups of shredded cheese to browned hamburger/Rotel mix (please remember to drain hamburger before adding to cheese
  8. Stuff peppers about 3/4 of the way full of hamburger/Rotel/cheese mixture
  9. Heap wild rice you previously made on top and sprinkle with another pinch of shredded cheese
  10. Bake at 350 for 15 minutes or until cheese is nicely melted
