Moroccan Charmoula

  1. Mix the lemon juice, garlic, paprika, cumin, and cayenne in a mixing bowl until smooth.
  2. Whisk in the parsley, cilantro, and olive oil.
  3. Taste and add more oil if necessary and salt and pepper to taste.
  4. Sprinkle in a little preserved lemon if you like.
  5. Variations:
  6. Charmoula citrus dressing: Make the charmoula, then add more lemon juice to thin it to the consistency of a dressing.
