Minestrone Soup ( Wayne's Style)
- 1 12 lbs mild Italian sausage
- 1 12 lbs hot hot Italian sausages
- 5 cooked hamburger patties (cut into cubes)
- 3 tablespoons olive oil
- 10 cups water
- 1 liter beef stock
- 1 large zucchini (diced with peel on )
- 2 large carrots (sliced)
- 2 medium onions (diced)
- 12 head green cabbage (shredded)
- 680 ml tomato sauce
- 13 ounces tomato paste
- 2 (10 ounce) cans mushrooms (sliced)
- 12 ounces nibblet corn
- 38 ounces red kidney beans
- 14 cup parsley
- 2 tablespoons sweet basil
- 2 teaspoons salt
- 14 teaspoon pepper
- 2 tablespoons garlic powder
- 2 12 cups fussilli pasta (optional pasta of your choice)
- grated parmesan cheese
- Brown sausage in oil.
- After browning sausage, drain excess grease then put all ingredients ( except noodles) in a stock pot and simmer for 45 minutes then add pasta and continue a low simmer for 45 more minutes.
- Soup is ready when pasta and vegetables are tender.
- You can use a crock pot and downsize the recipe setting the cooking time for 4-6 hours.
