Salad, Black Bean
- 3/4 pound romaine lettuce
- 3 fresh, medium whole tomatoes
- 4 cup black beans cooked or canned without added salt
- 2 carrot
- 1/2 cup
- 1/2 cup unsalted, roasted soy nuts
- 32 ounce fat-free milk
- 4 apple
- Chop lettuce and tomatoes; combine in bowl and top with black beans (drained).
- Peel and then grate or chop carrots; sprinkle on top of salad.
- Split salad between four people, and serve everyone a glass of milk (8 ounces = 1 cup) and an apple.
