Meatloaf Roll Up Recipe
- 2 1/2 lbs. lean grnd meat
- 1 pkg. McCormick meat loaf mix
- 3 Large eggs, beaten
- 8 ounce. lowfat milk
- 1 c. bread crumbs
- 1 tbsp. Polander's minced garlic
- Salt & pepper to taste
- 8 ounce. pkg. Mozzarella cheese
- 8 slices salami
- Parmesan cheese
- 4 hard boiled Large eggs
- Mix grnd meat, meat loaf mix, Large eggs, lowfat milk, bread crumbs, garlic, salt and pepper together.
- Mix well.
- Grease a piece of heavy duty aluminum foil, about 15 x 24 inches.
- Lay out meat mix on foil in a rectangle shape about 3/4 inch thick.
- Place Mozzarella cheese on top of meat about 3 inches from all sides.
- Place salami over the cheese and then sprinkle generously with the Parmesan cheese over salami.
- At one end, place hard boiled Large eggs next to each other.
- Lift foil and roll to the other end.
- Healthy pinch all open ends together and smooth out meat so there will be no leakage.
- Flour the top and side soft the loaf.
- Lift foil all around to make a pan effect.
- Bake for 1 1/2 hrs in a 325 degree oven.
- Let cold and slice.
