Tuscan Bread Salad
- 1 loaf ciabatta
- 1 red onion, finely sliced
- 12 cucumber, chopped
- 1 lb ripe tomatoes, chopped
- fresh basil, shredded
- 8 tablespoons olive oil
- 3 tablespoons white wine vinegar
- salt
- fresh ground black pepper
- Slice the ciabatta into 1in cubes.
- Place in a large salad bowl.
- Add the red onion, cucumber, tomatoes and basil.
- Whisk together the olive oil and wine vinegar.
- Season with salt and freshly ground pepper.
- Toss the dressing with the bread salad.
- Cover and chill for 2-3 hours before serving.
