Bialys (Polish) Recipe

  1. Small Loaf Dough:3/4 C water1 Tbsp oil2 tsp sugar1 tsp salt2 C bread flour1 1/2 tsp dry yeast
  2. 1-Place dough ingredient.
  3. in bread pan, select Dough setting, press start.
  4. 2-When dough has risen long sufficient, the machine will beep.
  5. Turn off bread machine, remove bread pan, and turn out dough onto a lightly floured countertop or possibly cutting board.
  6. Gently roll and stretch dough into a 10" (15") (20") rope.
  7. With a sharp knife, divide dough into (10) (15) (20) pcs; roll each into a ball.
  8. FILLING:3 Tablespoons (4-1/2 Tablespoons) (6 Tablespoons.)
  9. Chopped Onion2 teaspoon (1 Tablespoons) (4 tsp) Poppy Seeds1 teaspoon (1-1/2 tsp) (2 tsp) Oil1 healthy pinch (1/8 tsp) (1/4 tsp) Salt
  10. 3-Cover balls w/towel and let rest 10 minutes.
  11. Meanwhile, comb.
  12. the topping ingredient.
  13. Set Aside.
  14. 4-With rolling pin, roll each ball into 3-1/2" circles.
  15. Place on ungreased baking sheets.
  16. Cover with a towel and let rise in a hot oven till almost doubled in size, about 30-45 minutes.
  17. (Hint: To hot oven slightly, turn over on Hot setting for 1 minute, then turn it off, and place covered dough in oven to rise.
  18. Remove pan from oven before preheating).
  19. 5-With thumbs or possibly the bottom of a shot glass, gently depress the center of each roll.
  20. Fill with about 1 teaspoon of the onion mix.
  21. cover and let rise for 15 minutes more while preheating the oven to 450F.
  22. 6-Bake for 20-25 min till golden brown-brown.
  23. Remove from oven and cold on a rack.
