Hearty Morning Muffins
- 2 cups whole wheat flour
- 1 cup sugar
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 2 cups shredded carrots
- 13 cup chopped dried apricot
- 13 cup sunflower seeds
- 13 cup flaked coconut
- 13 cup semi-sweet chocolate chips
- 1 medium ripe banana, mashed
- 3 eggs
- 1 cup vegetable oil
- 2 teaspoons vanilla extract
- In a mixing bowl, combine the flour, sugar, baking soda and cinnamon.
- Add the carrots, apricotts, sunflower kernels, coconut and chocolate chips.
- Stir in the banana.
- Bea eggs, oil, and vanilla; stir into carrot mixture just until moistened.
- Fill greased or paper-lined muffin cups two-thirds full.
- Bake at 375 for 18-22 minutes or until a toothpick inserted near the center comes out clean.
- Cool 5 minutes; remove from pans to wire racks.
