Italian Pancake
- 1 1/2 cup all-purpose flour
- 1 medium onion
- 110 grams colby cheese
- 110 grams tasty cheese
- 1 tsp salt
- 2/3 cup water
- Dice onions and put into a large mixing bowl.
- Cut cheese into 1cm cubes.
- Add to the bowl.
- Add flour and salt.
- Mix well with a dinner knife, breaking up the cheese and onion as much as possible.
- Add water a bit and a time, mixing until all the flour is incorporated into a ball.
- Try to keep the mixture as dry as possible but moist enough to form a ball and avoid over mixing.
- Add enough oil to just cover the bottom of a large non-stick frying pan.
- Heat over a medium heat until very hot.
- Add mixture to the frying pan and spread out.
- Two dinner knives are good way to do this.
- Add a few holes in mixture to allow the oil to bubble up and help cook the centre of the pancake.
- After about 5 minutes when the bottom is golden, carefully flip the pancake.
- Take care to gently ease the cooked cheese off the pan before attempting to flip it.
- After about 5 minutes when the bottom is golden, remove from the pan, sprinkle with salt and cut into pieces like a pizza.
- Eat when hot or cold.
