Fluffy White Rice
- 1 cup long-grain white rice
- 1 knob unsalted butter or a tbsp of olive oil
- 1 3/4 cup water
- Rinse the rice in a few changes of water.
- Then drain well using a sieve.
- (Rinsing the rice in a number of different waters will remove loose starch, making the rice less sticky.)
- In a medium pot with a tight fitting lid, combine the water, the rice, salt and butter.
- (Tight fitting lid will keep all the steam in, if the lid is loose, put a clean kitchen towel between the pot and lid.)
- Bring to the boil over high heat.
- As soon as the water is boiling lower the heat to simmer.
- Cover with the lid also.
- Cook at a gentle simmer until the water is all absorbed and rice has become tender.
- Normally takes about 12-14 minutes.
- (Tip: If lifting lid to check rice, replace it as quickly as possible)
- When step 5 is done remove the pot from the heat and let it sit, undisturbed with the lid on, for a minimum of 5 minutes and a maximum of 30 minutes.
- Remove the lid, and fluff the rice gently with a fork.
- Serve immediately.
