Fluffy White Rice

  1. Rinse the rice in a few changes of water.
  2. Then drain well using a sieve.
  3. (Rinsing the rice in a number of different waters will remove loose starch, making the rice less sticky.)
  4. In a medium pot with a tight fitting lid, combine the water, the rice, salt and butter.
  5. (Tight fitting lid will keep all the steam in, if the lid is loose, put a clean kitchen towel between the pot and lid.)
  6. Bring to the boil over high heat.
  7. As soon as the water is boiling lower the heat to simmer.
  8. Cover with the lid also.
  9. Cook at a gentle simmer until the water is all absorbed and rice has become tender.
  10. Normally takes about 12-14 minutes.
  11. (Tip: If lifting lid to check rice, replace it as quickly as possible)
  12. When step 5 is done remove the pot from the heat and let it sit, undisturbed with the lid on, for a minimum of 5 minutes and a maximum of 30 minutes.
  13. Remove the lid, and fluff the rice gently with a fork.
  14. Serve immediately.
