The Beekman 1802 Chopped Salad
- 1 cup buttermilk
- 14 cup mayonnaise
- 2 tablespoons sour cream
- 2 tablespoons chopped parsley
- 2 tablespoons fresh lemon juice
- 1 teaspoon coarse kosher salt
- fresh ground black pepper (this was not in the original but I'd add it)
- 1 medium red bell pepper, cut into 1/2-inch squares
- 1 medium yellow bell pepper, cut into 1/2-inch squares
- 1 plum tomato, cored halved seeded and cut into 1/2-inch cubes
- 1 cucumber, halved lengthwise seeded and cut into 1/2-inch cubes
- 14 cup finely diced red onion
- 15 12 ounces chickpeas, drained
- 1 Hass avocado, cut into 1/2-inch chunks
- 2 cups chopped romaine lettuce
- 2 cups chopped buttercrunch lettuce
- In a large bowl, whisk together the buttermilk, mayo, sour cream, parsley, lemon juice, salt and pepper.
- Add the bell peppers, tomato, cucumber, onion, chickpeas, avocado and lettuce and toss to combine.
- Serve in chilled plates.
