Bruschetta
- 8 whole Roma Tomatoes, Diced
- 1/4 cups Onion, Chopped Finely
- 1/4 cups Shredded Parmesan Cheese
- 2 cloves Garlic, Minced
- 1/4 cups Fresh Basil, Chopped
- 2 Tablespoons Balsamic Vinegar
- 2 teaspoons Olive Oil
- 1/4 teaspoons Salt
- 1/4 teaspoons Ground Pepper
- 2 loaves Baguette Bread
- 1/4 cups Melted Butter
- Mix all ingredients together except bread and butter.
- Refrigerate for at least 1 hour before serving.
- Just before serving, thinly slice baguette and place on a cookie sheet.
- Brush melted butter over the bread and place under a broiler until lightly toasted, approximately 2 minutes.
- Serve toasted bread alongside the bruschetta.
