Boiling Chicken A La Granadina Recipe
- 2 kg of boiling chicken.
- 1 lrg onion.
- 1 x bay leaf.
- 1/4 lt of white table wine.
- 200 gm of sweet potato (jams).
- 1 sprg of parsley.
- 1 kg spinach. Salt and grnd black pepper.
- 1/2 x glass of extra virgin extra virgin olive oil. Some grains of black pepper.
- 4 x bananas
- Chop the boiling chicken in small pcs, wash it well and sprinkle with salt and pepper.
- Place the meat, the oil, the bay leaf, the minced onion and the grains of pepper in a large pan.
- Heat on a medium flame.
- When the meat is browned, add in the wine and heat till it is reduced.
- Cover with warm water and leave to cook.
- Separately, boil the spinach and drain it well.
- Place in a frying pan with a little oil, the sweet potato cut in cubes and the sliced bananas.
- Fry gently till the banana is browned.
- When the boiling hen is cooked and tender add in the mix from the frying pan and the parsley.
- Boil for 10 min, stirring to avoid it sticking to the bottom of the pan.
- Add in salt to taste.
- Serve warm.
