Station 45 Oven Omelet
- 4 large eggs
- 11 egg whites
- 12 cup soymilk
- 8 ounces reduced-fat Mexican cheese blend
- 1 yellow bell pepper, chopped
- 1 orange bell pepper, chopped
- 1 red bell pepper, chopped
- 1 jalapeno, chopped
- 1 large yellow sweet onion, chopped
- 1 (4 ounce) can canned diced green chiles
- 8 ounces baby portabella mushrooms, sliced (chopped if you prefer)
- 8 ounces cooked ham, cubed
- 1 teaspoon hot pepper sauce
- 14 teaspoon salt
- 14 teaspoon pepper
- 1 tablespoon olive oil
- canola oil cooking spray
- Heat oil in large non-stick skillet.
- Add onion, peppers, mushrooms, salt and pepper to taste and saute.
- Remove while still firm (do not over cook).
- Grease 9x13 pan, layer in pepper onion mixture, cheese, and ham.
- Beat together Eggs, Soy milk, hot pepper sauce, salt and pepper.
- Pour over Pepper mixture.
- Bake at 350 F for 25 to 30 min, or until done.
