Pfeffernuesse
- 1 cup firmly packed light brown sugar
- 12 cup butter or 12 cup margarine, softened
- 2 eggs
- 1 teaspoon pure vanilla extract
- 12 teaspoon lemon extract
- 12 teaspoon pure anise extract
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 12 teaspoon salt
- 12 teaspoon ground black pepper
- 18 teaspoon ground nutmeg
- 18 teaspoon ground cloves
- 2 34 cups flour
- confectioners' sugar
- Beat brown sugar and butter with electric mixer on medium speed until light and fluffy.
- Beat in eggs and extracts.
- Add remaining ingredients, except confectioners sugar, to flour and sift.
- Gradually add to butter mixture, mixing well, Cover and refrigerate for 2 hours.
- Peheat oven to 375F Shape teaspoonfuls of dough into ovals and place 1-inch apart on ungreased baking sheets.
- Bake 10 minutes.
- Cool on baking sheets 1 minute.
- Remove to wire racks; sprinkle confectioners sugar over warm cookies.
- When cookies are cool, store in airtight containers.
