Traditional Leek & Potato Soup From Wales Recipe

  1. Clean leeks under running water and cut into 1/2" squares.
  2. Peel and dice potatoes.
  3. Cut bacon into small squares and fry.
  4. Add in butter and let it heat, then add in vegetables.
  5. Saute/fry about 5 min without browning.
  6. Stir in stock, season to taste.
  7. Cover and simmer 30 min till vegetables are tender.
  8. Add in lowfat milk a little at a time, NOT boiling, then stir in parsley.
  9. Serve in soup bowls with liberal sprinkling of grated cheese.
  10. Serves 4.
