Polenta Hearts

  1. Heart-shaped cookie cutter
  2. Bring water to a boil in a saucepan.
  3. Add salt to taste and return to a rapid boil.
  4. Slowly whisk the polenta and stir for approximately 5 minutes.
  5. Stir in butter.
  6. Spray an oven dish or sheet pan with nonstick cooking spray.
  7. Pour polenta into dish and spread evenly to make a 1/2-inch layer.
  8. Chill in refrigerator for about 1 hour.
  9. Punch out heart shapes with the cookie cutter and set aside.
  10. Heat a nonstick skillet on medium heat.
  11. Add the olive oil and sear polenta hearts until golden on both sides and heated throughout.
