smoked sausage casserole
- 2 lb smoked sausage
- 2 red onions
- 2 green bell peppers
- 1 lb yellow squash
- 1 large jalapeno pepper
- 1 lb sugar snap peas
- 4 medium potatoes I used red skin on
- 1 cup zesty italian. salad dressing
- 2 tbsp minced garlic
- 1 tbsp kosher salt
- 1 1/2 lb sharp cheddar cheese
- preheat oven to 375
- chop everything into bite sized chunks excep the jalapeno mince that finely
- combine.
- everything.
- but cheese.
- in a large bowl add dressing and miix well
- add half of the cheese to the bowl and stir that in too.
- let sit for 30 minutes
- put mixture into a lasagna pan I'm lazy so I line the pan with foil for easier clean up
- spread the remaining cheese on top in a smooth layer
- bake in the center of the oven for 45 minutes
