Fairy-Tale Mushrooms

  1. Cut tomatoes in half widthwise; scoop out and discard pulp.
  2. Invert onto paper towels to drain.
  3. Carefully push each tomato half onto the narrow end of an egg.
  4. Cut a small hole in the corner of a small plastic bag; fill with mayonnaise.
  5. Pipe dots onto tomato tops.
  6. Place on a spinach-lined serving plate.
  7. Yield: 4 servings.
