Sea Bass with Whiskey Sauce
- 2 garlic clove (sliced)
- 4 tbsp olive oil
- 1 handful of Coriander (roughly chopped)
- 1 tbsp prepared mustard
- 2 tbsp whiskey
- 1/4 tsp salt
- 1/4 tsp Cayenne chilli pepper
- 1 Fish stock cube (dissolved in 2 tablespoons of warm water)
- 1 sea bass (per person)
- 1/2 tsp sea salt
- To prepare the fish, wash and open in half, it'll be easier to cook.
- Next sprinkle with a pinch of sea salt.
- Heat the oil on a medium heat in a frying pan.
- Add the garlic cloves and fry for about 2 minutes.
- Reduce heat to low.
- Add the coriander and stir.
- Next add the mustard, whiskey, chilli pepper, stock cube and salt.
- Cook for another 3-4 minutes.
- Remove from the heat, and reserve until the fish is done.
- Cook the sea bass on the barbecue for around 15- 20 minutes, flipping the fish often.
- When cooked, drizzle all the sauce over the fish and serve with some boiled potatoes.
