Cream of Mushroom Soup

  1. in a 3-quart saucepan, saute the mushrooms in the oil until tender.
  2. Reduce heat to low.
  3. On reduced heat, add the flour and thyme.
  4. Saute 3 minute
  5. Turn up heat to med/high and add soy milk and vegetable broth.
  6. Bring to slow boilm stirring occasionally.
  7. Add salt to taste.
