Garden Lentil and Rice Salad
- 1-1/2 qt. jasmine rice, uncooked
- 2 qt. carrots, cut into 1/2-inch-thick slices Target 2 lb For $3.00 thru 02/06
- 2 qt. dried lentils, cooked, drained
- 2 qt. celery, cut into 1/4-inch-thick slices
- 1-1/4 qt. KRAFT Light Italian Reduced Fat Dressing
- 2 cups fresh parsley, minced
- 1 Tbsp. salt
- Cook rice as directed on package.
- Meanwhile, cook carrots in boiling water 5 min.
- or until crisp-tender.
- Drain carrots.
- Place in large bowl.
- Add rice and all remaining ingredients; mix lightly.
- Cover.
- Refrigerate several hours or until chilled.
