Pork Tenderloin Medallions with Apples and Herbs
- 1/4 cup Kraft Extra Virgin Olive Oil Aged Balsamic Vinaigrette Dressing
- 1 pork tenderloin (1 lb./450 g), cut crosswise into 8 pieces
- 2 apples, finely chopped King Sooper's 1 lb For $0.87 thru 02/09
- 1 Tbsp. chopped fresh sage
- 1 Tbsp. chopped fresh thyme
- 2 Tbsp. apple juice
- Heat dressing in large skillet on medium-high heat.
- Add meat; cook 4 to 6 min.
- on each side or until done (160 degrees F).
- Remove from heat; cover to keep warm.
- Add apples to same skillet; cook and stir 4 min.
- or until crisp-tender.
- Add remaining ingredients; stir to scrape browned bits from bottom of skillet.
- Return meat to skillet; spoon apple mixture over meat.
- Cook until meat and apple mixture are heated through.
