Microwave Lemon Meringue Pie Recipe
- 1 (9 inch) pie crust in microwave pan, baked
- 3 egg yolks, beaten
- 1 1/2 c. sugar
- 1/3 c. lemon juice
- 1/3 c. cornstarch
- 1 tbsp. grated lemon peel
- 1 1/2 c. boiling water
- 3 tbsp. butter
- Combine sugar and cornstarch in a 1 1/2 qt bowl.
- Stir in water.
- Cook on high, stirring ???___???
- till mix is thick and translucent/soft.
- Gradually stir 1/2 c. of warm mix into egg yolks.
- Stir egg yolk mix into remaining warm mix till blended.
- Cook on high 45 seconds.
- Stir in lemon juice, lemon peel and butter.
- Pour into baked pie crust.
- Prepare meringue.
- Spread over warm filling.
- Seal meringue to edge of crust.
- Cook on medium 3 1/2 to 5 min.
- Brown 4-6 min.
